Choosing the Right Size

Turkey size is based on a simple rule: 1 to 1.5 pounds per person. The lower end (1 lb) works if you don’t want leftovers or are serving lots of side dishes. The higher end (1.5 lbs) ensures leftovers for sandwiches, soup, and other delicious post-holiday meals. Our calculator factors in children, who typically eat about half as much as adults.

The Defrosting Timeline

Proper defrosting is crucial for food safety. Never defrost at room temperature! The refrigerator method is safest: allow 24 hours for every 4-5 pounds. A 16-pound turkey needs 4 days. The cold water method is faster (30 minutes per pound) but requires changing the water every 30 minutes and cooking immediately.

Cooking Time Factors

Cooking time depends on several factors:

  • Turkey size: Larger birds take longer (obviously!)
  • Stuffing: Stuffed turkeys need 15-30 minutes more
  • Oven temperature: 325°F is standard, 350°F is slightly faster
  • Starting temperature: Cold turkey from fridge takes longer
  • Oven accuracy: Use an oven thermometer to verify temperature

Food Safety Temperature

The USDA recommends cooking turkey to an internal temperature of 165°F measured in the thickest part of the thigh and breast. Use a good meat thermometer - it’s the only reliable way to know when your turkey is done. Time estimates are just that: estimates. Temperature is fact.

Pro Tips for Perfect Turkey

  • Dry brine (salt) the turkey 24-48 hours before cooking for maximum flavor
  • Bring turkey to room temperature 1 hour before cooking
  • Tuck wing tips under to prevent burning
  • Use a roasting rack so turkey doesn’t sit in drippings
  • Baste every 45 minutes if desired (optional - some prefer not to open oven)
  • Tent with foil if browning too quickly
  • Always let turkey rest 20-30 minutes before carving
  • Save those drippings for gravy - they’re liquid gold!
