From Fannie Farmer's level cup to baker's percentages
Until Fannie Farmer's 1896 Boston Cooking-School Cook Book introduced the level-measured cup and spoon, American recipes were impressionistic - 'a teacup of flour', 'a knob of butter', 'a glass of milk' - and reproducibility depended entirely on the cook's eye. Farmer's standardisation was revolutionary at the time, but it created a problem that still haunts American baking: a cup of flour is a volume, not a mass, and flour packs at wildly different densities depending on how you fill the cup.
Modern US flour brands disagree about what 1 cup of all-purpose flour weighs. King Arthur publishes 120 g/cup. Gold Medal lists 125 g (rounded to 4 oz). Bob's Red Mill labels 130 g. Pillsbury says 128 g. The same recipe, the same cup measure, the same brand of flour - but a 10-12% range across the bag of any given national chain. That is the difference between a tender cake and a leaden one.
The technique used to fill the cup matters even more than the brand. 'Dipped and swept' - plunging the cup into the bag and levelling - compacts the flour to roughly 142-150 g/cup. 'Spooned and levelled' - lifting flour with a spoon into the cup, then sweeping the top - yields the canonical 120-125 g/cup. 'Sifted then measured' can be as low as 105-110 g/cup. Pre-2001 King Arthur cookbooks specified sifted; post-2001 they specified spooned. Old recipes used with new techniques fail consistently.
European baking solved this problem in 1910 when French miller Raymond Calvel codified the 'baker's percentage' system. In a baker's formula, flour is always 100%, and every other ingredient is expressed as a percentage of the flour weight. Water 65%, salt 2%, yeast 1%, and so on. Scaling is trivial - multiply everything by the same factor - and substitution is precise because the relationships are by mass, not volume. Every professional bakery on earth uses some variant of this system.
The mass-vs-volume divide largely tracks geography. Continental Europe, Japan, and Australia weigh flour. The UK is split - older home recipes use ounces by weight, newer ones grams, and competitive baking shows now require digital scales on the bench. The United States remains the last major holdout for volume measurement in home recipes, though the rise of social-media bakers like Joshua Weissman, Claire Saffitz, and the King Arthur educators has shifted American home baking toward grams over the last decade.
Alternative flours upend the volume convention completely. Almond flour is 30% lighter than wheat AP because its particles are larger, irregular, and pack less tightly. Coconut flour absorbs four times its weight in liquid - you cannot 1:1 substitute it without re-balancing the entire formula. Chickpea (besan) is dense and oily; tapioca starch is fluffy and weightless. The shift to gluten-free baking forced even American home cooks to confront ingredient-specific densities, which is why this converter shows 19 distinct flour types side-by-side.
The modern weighed-baking shift is irreversible. Digital pocket scales cost under twenty dollars, professional pastry schools require them on day one, and every new American baking book published since roughly 2018 lists weights alongside cups. Old cookbooks are still useful, but recipes from the 1950s-1990s need an asterisk: which cup, which fill technique, and which flour brand? When the answer matters, weigh everything.
