The Ounce: From Roman Uncia to Avoirdupois to Troy

The ounce traces to the Roman uncia (1/12 of a Roman libra = 27.3 g). The libra was the Roman pound, divided into 12 unciae (the same word root as inch — 1/12 of a foot — and as the "ounce" we use today). Medieval Europe inherited the Roman libra-uncia system but immediately fragmented into dozens of local pound definitions. The Tower pound (350 g), London merchant pound (453.6 g), Troyes fair pound (373 g), and Cologne mark (233.8 g) all coexisted in 14th-century commerce.

The avoirdupois ounce (literally "goods of weight" in Old French) emerged from the 14th-century London merchant pound used for "goods sold by weight" (wool, spices, metals). The 1 lb avoirdupois = 16 oz = 7000 grains relationship was standardized by the 1303 King Edward Compositio Mensurarum. The avoirdupois pound became the dominant English-speaking commercial weight by 1600 and was inherited unchanged by the American colonies.

The troy ounce (named after the Troyes commercial fairs in Champagne, France, 12th-13th century) was reserved for precious metals, gemstones, and pharmacy. 1 troy lb = 12 troy oz = 373.24 g; 1 troy oz = 31.1035 g. The troy oz remained the standard for gold, silver, platinum, and gem weights through to the modern era. The London Bullion Market Association quotes spot prices in $/troy oz. Apothecary ounce is identical to troy ounce; the 1858 UK Medical Act phased out apothecary weights from pharmacy in favor of metric, but the troy oz survives in precious metals trade.

The 1959 International Yard and Pound Agreement, signed by the US, UK, Canada, Australia, New Zealand, and South Africa, defined the avoirdupois pound as exactly 0.45359237 kg = 453.59237 g, and the avoirdupois ounce as 1/16 of that = 28.349523125 g exactly. Before 1959, the US and UK had slightly different definitions (US: 453.5924277 g/lb; UK: 453.59243 g/lb), causing trade-document disagreements. The 1959 unification standardized commerce across the English-speaking world.

Pharmaceutical weights underwent metrication globally during the 20th century. The US Pharmacopoeia converted to metric units in the 1970s; the British Pharmacopoeia in 1969. Modern compounding pharmacies work in milligrams and grams exclusively. The drachm (= 60 grains), scruple (= 20 grains), and grain (= 64.8 mg) survive only in historical recipes and the occasional reference to firearm propellant weights (gunpowder is still measured in grains: 230-grain .45 ACP bullet = 14.9 g).

Kitchen scales went digital in the 1990s and global in the 2000s. Pre-digital kitchen scales were spring-based (cheap, +/- 10 g) or beam-balance (expensive, +/- 1 g). Modern digital scales use strain gauges with +/- 0.5 g accuracy at consumer prices, +/- 0.1 g at semi-pro tier. The 2010s sourdough renaissance drove kitchen-scale adoption among American bakers (US Census of Manufactures showed a 4x rise in kitchen-scale unit sales 2010-2020). Recipe culture is split: precision baking has fully gone weight-based, while general home cooking still uses volume.

Postal services historically used the ounce as the base rate. US first-class mail rates jump at 1 oz, 2 oz, 3 oz thresholds. Royal Mail switched fully to gram-based pricing in 2006. Most other national postal services use gram thresholds (50 g, 100 g, 250 g, etc.). International commercial shipping (DHL, FedEx, UPS) uses kg for billing but cm for dimensional weight; the kg/cm hybrid is the global standard for parcel logistics. Domestic US USPS retains oz internally even as customer receipts show both g and oz.

Sourdough hydration ratios are 70-85% water-to-flour by weight, calculated to 0.1%. A 1000 g flour bake needs 750 g water exactly. The 1 kg flour preset shows the oz equivalent (35.27) which I share with American visitors to my classes.

Pharmaceutical compounding requires +/- 0.1 g precision, but troy/apothecary oz still appears in historical recipes I'm asked to interpret. The FAQ separating avoirdupois from troy clarifies a common pharmacist-pediatrician confusion.
